DuraChef® Clamshell Release Sheet Cleaning & Care Instructions

Cleaning Instructions

  • Wipe the release sheet with a grill squeegee in a downward motion after each batch or run of product.
  • Clean with a clean, sanitizer-soaked cloth at least four times per hour, more often during peak periods.
  • At the end of each day, clean both sides of the sheet using an approved high-temperature grill cleaner, rinse, and dry flat.
  • Flip or rotate the sheet daily for even wear, using both sides to maximize life.
  • DO NOT use abrasive pads, scrapers, or sharp objects for cleaning to avoid damaging the PTFE coating.
  • DO NOT fold or crease release sheets in the cook zone.

Replacement Criteria

  • Replace the sheet if cleaning does not remove carbon or food buildup, or if food begins sticking to the surface.
  • Tears, Rips, or Holes: Any break in the PTFE coating that exposes the substrate, especially in the food-contact zone, requires prompt replacement.
  • Persistent Sticking: When food sticks despite following recommended cleaning procedures, the non-stick surface is no longer effective.
  • Excess Buildup: Heavy carbon or residue that cannot be cleaned off fully signals the end of the sheet's service life.
  • Exposed Fiberglass Threads: PTFE release sheets that show the fiberglass threads should be replaced.

There is no fixed time interval; replacement depends on use, cleaning diligence, and product buildup.

These guidelines ensure optimal grill performance and sheet longevity for clamshell grills. Please refer to your equipment's OEM guidelines for specific cleaning and replacement instructions.
